How each recipe was chosen

Every dish had to pass five tests: (1) deeply traditional and popular in its country; (2) built on vegetables, legumes, whole grains, fruit, nuts, fish or lean protein; (3) minimally processed; (4) affordable with local ingredients; (5) nutritionally balanced after our lighter tweaks, such as less oil, more greens and whole-grain swaps. Nutrition values are estimates from standard food composition data (USDA FoodData Central) and vary by brand and portion.

Quick answers

Frequently asked questions

Which are the 10 most populous countries?

India, China, the United States, Indonesia, Pakistan, Nigeria, Brazil, Bangladesh, Russia and Ethiopia, based on UN World Population Prospects 2024 and 2026 estimates. Russia and Ethiopia sit close together, and rankings can shift slightly between sources.

Are the nutrition numbers exact?

No. They are estimates calculated from standard food composition data and rounded. Brands, portion size and cooking method change real values. Use them for planning, not for medical dosing.

How do I make a recipe even healthier?

Use the “Healthier swaps” box on each recipe. In general, add vegetables, choose whole grains, cut oil by a third, use herbs and spices before salt, and keep portions of fried sides small.

How long can I keep leftovers?

Cool cooked food within 2 hours, refrigerate at 5 °C or below, and eat most dishes within 3 to 4 days. Reheat until steaming hot (75 °C). Rice dishes need fast cooling to reduce Bacillus cereus risk.

Can people with diabetes or kidney disease use these recipes?

Many dishes are rich in fibre and slowly digested carbohydrates, which is helpful for blood sugar. Portions, potassium, phosphorus and protein needs differ in kidney disease. Please check with your doctor or dietitian first.
